What are some delicious ways to prepare sweet potatoes?

Besides baking them. :)
Also – I do not like to add “sweet” things to my sweet potatoes. No sweet butter, no brown sugar, etc. I like a baked sweet potato with regular butter and sour cream! So keep that in mind.

Sweet potato frys are tasty. Or cut them up and roast them with green beans, walnuts add salt, pepper, garlic and a little paprika. I add a tad bit of parm cheese to it also.

1. Baked sweet potatoes with herbed goat cheese or grated parmesan cheese are delicious.

2. Roast them alongside/in the same pan with a roast.

3. Slice raw sweet potatoes approx. 1/4-inch thick. Place in bowl. Toss with about 2-3 teaspoons olive oil, and herbs of your choice…rosemary or a mixture of thyme, marjoram, sweet basil, or spice them up with curry. Arrange on baking sheet in single layer. Bake at 425-degrees for about 25 minutes, flipping over after 10-12 minutes. Keep an eye on ‘em so they don’t get overdone.

4. Mash with butter or sour cream.

keep it simple. sweet potatoes can stand alone without messing around with them too much.

I made a shepherd’s pie using sweet potatoes instead of regular. It was very good. Go to recipezaar for shepherd’s pie recipes.

And try a spicy soup- cook with onions, garlic, fresh ginger and fresh chile pepper, blend with coconut cream, seasoning and fresh coriander ( cilantro), you can add creme fraiche ( similar to sour cream) and chopped roasted peeled sweet peppers.It’s smooth, colourful, fresh, very healthy,freezes well and is very comforting on a dull day, with some buttered toast or garlic croutons!
