What is a good recipe for actuall sweet crepes?

| Sweet | By: registrar

I’ve tried a few recipes to make crepes, but none of them come out sweet. They usually just come out bland. So does anyone have a recipe for actual sweet crepes? Like they serve at Holders Country Inn, or something like that? Thank you.

Sweet Crepes

Prep Time: 10 min Inactive Prep Time: 1 hr 0 min Cook Time: 18 min Level:

Ingredients:
3/4 cup all-purpose flour
1 teaspoons salt
1 cup milk (preferably whole)
2 eggs
2 tablespoons sugar
1 tablespoon melted butter, plus more for cooking crepes
1/2 teaspoon vanilla extract

Serving suggestions:
Jam

Honey

Sugar

Chocolate hazelnut spread (recommended: Nutella)

Peanut butter

Sliced bananas

Put the flour and salt and in a large mixing bowl. Gradually whisk in the milk. Whisk in the eggs, 1 at a time, and then whisk in the sugar, melted butter, and vanilla. Cover and let rest in the refrigerator for about 1 hour.

Heat an 8-inch nonstick skillet over medium-high heat. Melt a small pat of butter in the pat and swirl around so that it lightly coats the surface.

Add 1/3 cup of the batter and move your wrist in a circular pattern to coat the pan with thin even layer of batter. Cook for about 1 minute or until the first side browns lightly, then flip and cook 45 seconds to 1 minute longer. Remove to a plate and repeat with remaining batter.

Fill with jam, honey, sugar, chocolate hazelnut spread, peanut butter, bananas – anything sweet that you enjoy from your pantry.

BASIC CREPES

1 1/2 c. all purpose flour
1 tsp. sugar
1/8 tsp. salt
3 eggs, room temperature
1 1/2 c. milk
2 tbsp. butter
Butter for cooking

Sift flour, sugar, and salt together into a bowl. Add eggs and mix together thoroughly with a whisk – mixture will form a thick paste. Add milk gradually and slowly, beating thoroughly until you have air bubbles. Add melted and cooled butter. Add flavoring now if one is desired (possibly 1 teaspoon grated lemon peel – 1 teaspoon dried herbs). Let batter stand for at least 1 hour until the air bubbles disappear. Makes about 16 crepes.

FLAVORING FOR DESERT CREPES:

1 teaspoon vanilla and 1 extra tablespoon sugar or 1 teaspoon grated lemon rind and 1 extra tablespoons sugar.

The breakfast crepe recipe I make is easy and to me it tastes slightly sweet:

1 1/2 c. Milk
1 c. flour
2 eggs
1 tbsp oil
1/4 tsp salt
1 tsp sugar
1 tsp vanilla

*sometimes I’ll zest a little bit of lemon or orange into it

I mix that all in a blender to get rid of the lumps, then refridgerate for 1 hour (that part is important…I tried it without refridgerating and it did not work)

Then I pour the batter onto my little small frying pan and swirl it to the edges of the pan so it’s flat.

When they’re cooked I put a little powdered sugar inside and roll them up. I prefer my crepes to be plain, but not bland. I’ve eaten these with nothing on them and I’ve never thought they were “bland”, theres always a bit of sweetness, but the powdered sugar rolled in the middle adds a bit more.

Or you could try other toppings like jam, peanut butter, nutella, chocolate sauce, whipped cream, or ice cream (for a dessert crepe)
